This specific coffee undergoes a unique monsoon process that alters its shape, size and hue. The idea of "monsooning" coffee originated when beans were transported on ships from India to Europe. The beans transformed in appearance due to the humid conditions and winds at sea, becoming swollen and pale yellow. This surprisingly resulted in a smooth, mellow flavor that gained popularity in Europe. Nowadays, warehouses replicate the monsooning process to sell to roasters worldwide, producing the same delicious cup that sparked a movement.
