š Pumpkin Spice muffins are the perfect treat to make for the fall season, and a must in our household! They are flavorful, moist, filled with real pumpkin puree, easy to make, and why not try a unique spin on the classic P.S. muffin recipe, and give a little kick to your morning breakfast baked goods with our pumpkin spice coffee glaze drizzled on top! š
Instructions

Preheat the oven to 375ā degrees. Line a muffin pan with muffin papers.

In a medium bowl whisk together the flour, pumpkin pie spice, baking powder, baking soda and salt.

In a separate large bowl whisk together the oil, sugars, eggs, vanilla extract and pumpkin puree*.Ā

Mix the flour mixture into the pumpkin mixture until no lumps remain (don't over-mix, otherwise they will turn out tough).

Spoon the batter into a lined muffin pan. You should end up with about 12 muffins.

Bake in a preheated oven for 17-22 minutes or until an inserted toothpick comes out clean. Let them cool and drizzle the coffee glaze on top, and enjoy!
*Make sure youāre using 100% pure pumpkin puree and not canned pumpkin pie filling, it will taste much better using the pure stuff, plus pumpkin pie filling has extra added ingredients we don't need in the recipe (but if you really want, you could try the pumpkin pie filling and see how you like it that way).
Muffin Ingredients
- 1 Ā½ cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- Ā½ teaspoon baking soda
- Ā¼ teaspoon salt
- Ā½ cup vegetable oil
- Ā½ cup white sugar
- Ā½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract

1 cup canned 100% pumpkin puree

Pumpkin Spice Coffee Glaze Ingredients
- 2 tablespoons butter
- 1 1/4 cups powdered sugar
- 1 teaspoons vanilla extract
- 1ā2 tablespoons of our "purrumpkin spice" coffee brewed
For the glaze, melt butter in saucepan. Add powdered sugar and vanilla, it will be thick and sticky. Add the brewed pumpkin spice coffee until desired consistency is reached.

*Optional Sugar and Pumpkin Spice Mix
- Ā 2-3 tablespoons granulated sugar
- 1-2 tsp pumpkin pie spice
If you want to add an extra crunchy texture to your muffin and make them even sweeter, you can dip the semi-warm muffins into a mix of sugar and pumpkin pie spice, shake off the extra, and then drizzle with the glaze on top.
